Pioneer Woman Scalloped Potatoes

Ingredients
  

  • 4 large russet potatoes peeled and thinly sliced
  • 1 medium onion thinly sliced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 cup shredded cheddar cheese optional

Instructions
 

  • Preheat oven to 350°F
  • Peel and slice potatoes thinly
  • Slice onion thinly
  • Melt butter in skillet
  • Whisk in flour and cook 1 minute
  • Slowly add milk while whisking
  • Cook until slightly thickened
  • Add salt, pepper, paprika
  • Grease baking dish
  • Layer half potatoes and onions
  • Pour half sauce over layer
  • Repeat layers
  • Add cheese if using
  • Cover with foil
  • Bake 45 minutes
  • Remove foil
  • Bake additional 30 minutes
  • Rest 10 minutes before serving

Notes

  • Slice potatoes evenly
  • Cover during the first bake stage
  • Let rest before serving
  • Can assemble ahead
  • Store refrigerated up to 4 days
  • Not freezer-friendly
  • Add garlic or herbs if desired
  • Perfect holiday side dish
