large russet potatoes
peeled and thinly sliced

medium onion
thinly sliced

tbsp
butter
3
tbsp
all-purpose flour
2
cups
whole milk
1
tsp
salt
½
tsp
black pepper
½
tsp
paprika
1
cup
shredded cheddar cheese
optional
Instructions
Preheat oven to 350°F
Peel and slice potatoes thinly
Slice onion thinly
Melt butter in skillet
Whisk in flour and cook 1 minute
Slowly add milk while whisking
Cook until slightly thickened
Add salt, pepper, paprika
Grease baking dish
Layer half potatoes and onions
Pour half sauce over layer
Repeat layers
Add cheese if using
Cover with foil
Bake 45 minutes
Remove foil
Bake additional 30 minutes
Rest 10 minutes before serving
Notes
Slice potatoes evenly
Cover during the first bake stage
Let rest before serving
Can assemble ahead
Store refrigerated up to 4 days
Not freezer-friendly
Add garlic or herbs if desired
