Ingredients
  

  • 2 large yellow onions cut into ½-inch rings
  • 1 cup almond flour
  • ½ cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 large eggs beaten
  • Cooking spray or olive oil mist
  • Optional Add-Ins:
  • Spicy Kick: Add ¼ tsp cayenne or chili powder
  • Cheesy Twist: Mix in shredded cheddar
  • Dairy-Free: Replace Parmesan with nutritional yeast

Instructions
 

  • Peel and slice onions into thick rings; pat dry.
  • In a bowl, mix almond flour, Parmesan, and spices.
  • In another bowl, whisk eggs.
  • Dip onion rings in egg, then coat with flour mix.
  • For extra crispiness, double dip (egg → coating → egg → coating).
  • Bake: Preheat oven to 400°F (200°C). Line a tray with parchment, spray lightly, and bake 18–20 minutes, flipping halfway.
  • Air Fry: Preheat to 375°F (190°C). Cook in batches for 10–12 minutes, shaking halfway.
  • Serve hot with keto-friendly dips like ranch or garlic aioli.

Notes

Dry onions well before coating.
Don’t overcrowd the tray or basket.
Freshly grated Parmesan gives better crunch.
Double coating = extra crisp!
