- 2 large yellow onions cut into ½-inch rings
- 1 cup almond flour
- ½ cup grated Parmesan cheese
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 large eggs beaten
- Cooking spray or olive oil mist
- Optional Add-Ins:
- Spicy Kick: Add ¼ tsp cayenne or chili powder
- Cheesy Twist: Mix in shredded cheddar
- Dairy-Free: Replace Parmesan with nutritional yeast
Peel and slice onions into thick rings; pat dry.
In a bowl, mix almond flour, Parmesan, and spices.
In another bowl, whisk eggs.
Dip onion rings in egg, then coat with flour mix.
For extra crispiness, double dip (egg → coating → egg → coating).
Bake: Preheat oven to 400°F (200°C). Line a tray with parchment, spray lightly, and bake 18–20 minutes, flipping halfway.
Air Fry: Preheat to 375°F (190°C). Cook in batches for 10–12 minutes, shaking halfway.
Serve hot with keto-friendly dips like ranch or garlic aioli.
Dry onions well before coating.
