Strawberry Rose Mocktail

Ingredients
  

  • Strawberry Rose Base:
  • 2 cups fresh strawberries hulled and halved
  • 2 tablespoons rose water
  • 3 tablespoons honey or sugar to taste
  • 2 tablespoons fresh lemon juice
  • ¼ cup water
  • To Assemble:
  • 2 cups sparkling water or club soda chilled
  • 1 cup lemonade or pink lemonade chilled
  • Ice cubes
  • Fresh strawberry slices for garnish
  • Edible dried rose petals for garnish optional
  • Fresh mint sprigs for garnish optional
  • Lemon slices for garnish optional

Instructions
 

  • Hull and halve strawberries. Reserve a few slices for garnish.
  • Blend strawberries, rose water, honey, lemon juice, and water until smooth.
  • Strain through a fine mesh strainer. Press pulp to extract all liquid. Discard pulp.
  • Taste and adjust sweetness or acidity as needed.
  • Cover and refrigerate the base for at least 30 minutes.
  • Fill each glass with ice.
  • Pour strawberry rose base into each glass, one third full.
  • Add a splash of chilled lemonade to each glass.
  • Top slowly with chilled sparkling water.
  • Stir very gently to combine without losing bubbles.
  • Garnish with strawberry slice, rose petals, and mint sprig.
  • Serve immediately.

Notes

  • Use fully ripe strawberries for the best flavour and colour
  • Start with less rose water and taste before adding more — it is strong
  • Strain the base well for a clear, elegant drink
  • Chill all components before assembling
  • Always add sparkling water last and pour gently to preserve bubbles
  • Taste and balance the base before refrigerating
  • Base keeps in fridge for up to 3 days — assemble drinks fresh
  • Dip glass rims in sugar for an extra special presentation
  • Scale up into a punch bowl for group servings
  • Use hibiscus tea instead of water for a deeper pink colour
