Hull and halve strawberries. Reserve a few slices for garnish.
Blend strawberries, rose water, honey, lemon juice, and water until smooth.
Strain through a fine mesh strainer. Press pulp to extract all liquid. Discard pulp.
Taste and adjust sweetness or acidity as needed.
Cover and refrigerate the base for at least 30 minutes.
Fill each glass with ice.
Pour strawberry rose base into each glass, one third full.
Add a splash of chilled lemonade to each glass.
Top slowly with chilled sparkling water.
Stir very gently to combine without losing bubbles.
Garnish with strawberry slice, rose petals, and mint sprig.
Serve immediately.
