Scampi Sauce Recipe

Ingredients
  

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 5 cloves garlic finely minced
  • ¼ teaspoon red pepper flakes adjust to taste
  • ¼ cup chicken or vegetable broth
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley finely chopped

Instructions
 

  • Heat butter and olive oil in a skillet over medium heat
  • Add minced garlic and red pepper flakes
  • Cook 30–60 seconds until fragrant, not browned
  • Pour in broth and simmer for 2–3 minutes
  • Stir in lemon juice and lemon zest
  • Season with salt and black pepper
  • Remove from heat and stir in chopped parsley
  • Use immediately over seafood, pasta, or vegetables

Notes

Keep heat moderate to avoid burning the garlic
Add lemon juice near the end for the brightest flavor
Sauce can be thickened by simmering an extra minute
For a lighter sauce, add a splash of pasta water or extra broth
Best used fresh; refrigerate leftovers up to 3 days and reheat gently
