In a large bowl, mix gluten-free flour and salt
Add yeast mixture, melted butter, and egg; mix until smooth and thick
Stir in honey and apple cider vinegar if using
Grease a 9-inch baking dish
Scoop dough with a greased spoon or scoop and place rolls close together
Cover loosely and let rise 45–60 minutes until puffy
Preheat oven to 375°F (190°C)
Bake uncovered for 18–22 minutes until lightly golden
Brush warm rolls with melted butter
Rest 10 minutes before serving
