Primanti Brothers Coleslaw (Copycat)

Ingredients
  

  • 6 cups very finely shredded green cabbage
  • ½ cup very finely shredded carrots
  • ½ cup mayonnaise
  • 2 tablespoons white vinegar
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Finely shred the cabbage and carrots into very thin, thread-like pieces and place in a large bowl.
  • In a separate bowl, whisk together mayonnaise, vinegar, sugar, salt, and black pepper until smooth.
  • Pour the dressing over the cabbage and carrots.
  • Toss thoroughly until all the cabbage is lightly coated without being overdressed.
  • Cover and refrigerate for at least 1 hour before serving to allow flavors to blend and cabbage to soften slightly.

Notes

Slice the cabbage extremely thin for authentic texture.
Do not overdress the slaw; it should be light, not heavy.
Chill time is important for best flavor.
Stir before serving if liquid settles at the bottom.
