Pollo Tropical Cilantro Garlic Sauce

Ingredients
  

  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 cup fresh cilantro packed
  • ½ cup fresh parsley packed
  • 6 cloves garlic peeled
  • 3 tbsp fresh lime juice
  • 2 tbsp white vinegar
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne optional

Instructions
 

  • Rinse and pat dry cilantro and parsley.
  • Add all ingredients to blender.
  • Blend on high 45-60 seconds until completely smooth and bright green.
  • Scrape down sides if needed and blend again.
  • Adjust consistency with water if too thick.
  • Taste and adjust seasoning.
  • Refrigerate 30 minutes for best flavor or serve immediately.

Notes

  • Fresh herbs are essential—dried won't work
  • Blend until completely smooth
  • A full cup of cilantro creates an authentic flavor
  • Store 5 days refrigerated
  • May darken slightly—normal oxidation
  • Stir before using if separated
  • Use all parsley if you hate cilantro
