Pick Up Stix House Special Chicken (Copycat)

Ingredients
  

  • pounds boneless skinless chicken breasts or thighs, sliced bite-size
  • 1 tablespoon cornstarch for chicken
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup broccoli florets
  • 1 cup carrots sliced
  • 1 red bell pepper sliced
  • ½ cup snow peas
  • 3 green onions sliced
  • ½ cup chicken broth
  • 3 tablespoons soy sauce low sodium
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch for sauce
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger minced

Instructions
 

  • Toss sliced chicken with cornstarch, salt, and black pepper; set aside
  • Whisk chicken broth, soy sauce, oyster sauce, hoisin sauce, brown sugar, sesame oil, and cornstarch until smooth
  • Heat 1 tablespoon oil in a large skillet or wok over medium-high heat
  • Add chicken in a single layer and cook until lightly browned and just cooked through
  • Remove chicken from pan and set aside
  • Add remaining oil to the pan
  • Stir in garlic and ginger and cook 20–30 seconds until fragrant
  • Add broccoli, carrots, bell pepper, and snow peas and stir-fry 3–4 minutes until crisp-tender
  • Return chicken to the pan
  • Pour in sauce and stir constantly until thickened and glossy, about 1–2 minutes
  • Stir in green onions and remove from heat

Notes

High heat is key for authentic stir-fry texture
Prep all ingredients before cooking for best results
Do not overcrowd the pan or the chicken will steam
Sauce thickens quickly—stir constantly once added
Best served fresh with rice or noodles
