Ingredients
  

  • For the Filling
  • 6 cups sliced peaches fresh, frozen, or canned
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons cornstarch
  • For the Cobbler Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup unsalted butter melted

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix peaches with granulated sugar, brown sugar, cinnamon, nutmeg, vanilla, lemon juice, and cornstarch until well coated.
  • Spread peach mixture evenly into a buttered 9×13-inch baking dish.
  • In another bowl, whisk flour, sugar, baking powder, and salt.
  • Add milk and whisk until smooth, then stir in melted butter.
  • Pour batter evenly over the peaches without stirring.
  • Bake for 40–45 minutes until golden brown and bubbly.
  • Let rest 10–15 minutes before serving.

Notes

Best served warm with vanilla ice cream, whipped cream, or caramel.
Fresh peaches give the best flavor; thaw and drain frozen peaches well.
Canned peaches work—drain and reduce sugar.
Don’t overmix the batter.
Add spices like cardamom or ginger for deeper flavor.
Substitutions:
Gluten-free flour 1:1 blend; almond/oat/soy milk; vegan butter; coconut sugar or monk fruit; swap peaches with berries, apples, or plums.
