Instructions

  • Blend strawberries, sugar, lemon juice, and water until smooth. Strain through fine mesh strainer. Press pulp to extract all liquid. Discard pulp. Refrigerate.

  • Blend blueberries, sugar, lemon juice, and water until smooth. Strain through fine mesh strainer. Press pulp to extract all liquid. Discard pulp. Refrigerate.
  • Once all layers are fully chilled, fill each tall glass three-quarters full with ice cubes.
  • Pour strawberry layer slowly into each glass over the ice, filling one third of the way up.
  • Place the back of a long-handled spoon just above the strawberry layer surface. Pour lemonade slowly over the back of the spoon until two thirds full.
  • Place the back of the spoon just above the lemonade surface. Pour blueberry layer slowly over the back of the spoon until the glass is full.
  • Do not stir or shake. Handle assembled glasses gently.
  • Garnish with strawberry slice on rim, blueberries on top, lemon wheel, and mint sprig.
  • Serve immediately with a straw and instructions to stir before drinking.

Notes

  • Chill all three layers completely before assembling — cold liquids layer more cleanly than warm ones
  • The spoon technique is essential — never pour any layer directly without using the back of a spoon
  • Pour every layer slowly and steadily — speed mixes the layers
  • Fill glasses generously with ice — it is both a temperature regulator and a structural barrier
  • Add garnishes gently — heavy drops disturb the top layer
  • Each layer should taste slightly more intense and sweeter than ideal — ice dilutes as it melts
  • Add slightly more sugar to the strawberry layer for a denser base that stays at the bottom
  • Assembled glasses should be kept refrigerated for up to 2 hours before serving
  • All three layers can be made up to 24 hours ahead and stored separately
  • Always tell guests to stir before drinking for the best combined flavour
