Crispy, caramelized, and packed with nutty, savory flavor, these roasted Brussels sprouts with Parmesan are irresistible. Perfect as a side dish, snack, or salad topper, they come together quickly with minimal ingredients.

Ingredients
  

  • 1 lb Brussels sprouts trimmed and halved
  • 3 tbsp olive oil
  • ¼ tsp salt or to taste
  • ¼ tsp black pepper
  • ¼ tsp garlic powder optional
  • ½ cup grated Parmesan cheese
  • Optional: 1 tsp balsamic glaze for drizzling
  • Optional: 1 tbsp toasted pine nuts for garnish

Instructions
 

  • Step 1: Preheat & Prep
  • Preheat oven to 400°F (200°C).
  • Trim ends and remove any yellow or damaged leaves.
  • Slice Brussels sprouts in half lengthwise.
  • Step 2: Season
  • Toss sprouts with olive oil, salt, pepper, and garlic powder (if using) until evenly coated.
  • Step 3: Roast
  • Spread sprouts on a baking sheet in a single layer.
  • Roast 20–25 minutes, stirring halfway, until edges are golden brown and crispy.
  • Step 4: Add Parmesan
  • Sprinkle grated Parmesan over hot sprouts.
  • Return to oven for 2–3 minutes until cheese melts and turns golden.
  • Step 5: Serve
  • Optionally drizzle with balsamic glaze and garnish with pine nuts.
  • Serve hot as a side dish or snack.

Notes

Halve evenly for uniform cooking.
Roast at high heat for crispy edges.
Stir halfway to ensure even browning.
Add Parmesan at the end so it melts without burning.
