One-Pan Mushroom Chicken Magic

- Chicken
- 4 chicken breasts or thighs
- 1 tsp paprika
- Salt & black pepper
- 1 tbsp olive oil
- 1 tbsp butter
- Mushroom Sauce
- 2 tbsp butter
- 8 oz mushrooms sliced
- 4 garlic cloves minced
- 1 tsp Italian seasoning or thyme + parsley
- 1 tsp Dijon mustard optional
- 1 cup chicken broth
- 1 cup heavy cream
- 1/3 cup grated Parmesan
- Salt & pepper
- Fresh parsley chopped
Pat chicken dry and season with paprika, salt, and pepper.
Heat oil and butter in a skillet; sear chicken 5–6 minutes per side until golden. Remove.
Add butter; sauté mushrooms until browned and moisture evaporates. Add garlic and cook 1 minute.
Stir in Italian seasoning and Dijon. Deglaze with broth, scraping browned bits.
Add cream and Parmesan; simmer gently until slightly thickened.
Return chicken to skillet; simmer on low 10–12 minutes until tender and sauce thickens.
Garnish with parsley; spoon sauce over and serve hot.
