Memorial Day Red White & Blue Fruit Skewers

Ingredients
  

  • For the Skewers:
  • 2 cups fresh strawberries hulled and halved if large
  • 2 cups fresh blueberries
  • 1 cup fresh raspberries
  • 2 cups large white marshmallows
  • 2 medium bananas sliced into thick rounds
  • 1 cup seedless white grapes
  • 2 tablespoons fresh lemon juice for banana slices
  • For the Cream Cheese Dipping Sauce:
  • 1 cup full-fat cream cheese softened
  • ½ cup full-fat Greek yogurt
  • 3 tablespoons honey to taste
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • Zest of half a lemon
  • For Serving:
  • Fresh mint sprigs for garnish
  • Extra blueberries and strawberries for scattering
  • Small bowl or ramekin for dipping sauce

Instructions
 

  • Soak wooden skewers in cold water for 20 minutes if using near heat.
  • Hull strawberries. Halve large ones. Leave small ones whole.
  • Slice bananas into thick rounds. Toss immediately in lemon juice to prevent browning.
  • Rinse all remaining fruit. Pat completely dry with paper towels.
  • Make dipping sauce. Beat softened cream cheese until smooth. Add yogurt, honey, vanilla, lemon juice, and zest. Beat until light and fluffy. Taste and adjust sweetness. Refrigerate until serving.
  • Thread skewers in red, white, and blue pattern. Suggested sequence: strawberry, marshmallow, blueberry, banana, raspberry, marshmallow, blueberry.
  • Leave a small gap at the bottom and top of each skewer.
  • Arrange skewers on a large serving platter.
  • Scatter extra berries and fresh mint sprigs around the platter.
  • Cover loosely with cling wrap and refrigerate for 30 minutes.
  • Transfer dipping sauce to a small serving bowl. Place alongside skewer platter.
  • Serve cold with napkins.

Notes

Dry all fruit completely before threading — wet fruit slides and looks untidy
Cut fruit to similar sizes for a neat, polished presentation
Pierce berries through the centre to prevent spinning on the skewer
Handle raspberries gently — thread them last and pierce through the base cavity
Toss banana slices in lemon juice immediately after cutting
Make dipping sauce at least 30 minutes ahead for best flavour and texture
Lay out all fruit in separate bowls before threading to stay organised
Serve on a white or navy platter for maximum colour impact
Make up to 4 hours ahead and keep refrigerated until serving
Add fresh mint garnish just before bringing to the table
