Mediterranean Tuna Salad

Ingredients
  

  • 2 cans 5 oz tuna, drained
  • 1 English cucumber diced
  • 1 cup cherry tomatoes halved
  • ½ cup Kalamata olives sliced
  • ½ cup red onion diced
  • ½ cup feta cheese crumbled
  • ¼ cup fresh parsley
  • Dressing: 3 tbsp olive oil 2 tbsp lemon juice, 1 clove garlic, 1 tsp oregano, salt/pepper to taste.

Instructions
 

  • Flake drained tuna into a large bowl.
  • Add cucumber, tomatoes, olives, onion, and parsley.
  • Whisk dressing ingredients in a separate small bowl.
  • Pour dressing over salad and toss gently to coat.
  • Fold in feta cheese.
  • Serve chilled or at room temperature.

Notes

English cucumbers provide the best crunch.
Store in the fridge for up to 3 days.
Serve in pitta bread or lettuce wraps.
