Mediterranean Tuna Salad

Ingredients

cans
5 oz tuna, drained
1
English cucumber
diced
1
cup
cherry tomatoes
halved
½
cup
Kalamata olives
sliced
½
cup
red onion
diced
½
cup
feta cheese
crumbled
¼
cup
fresh parsley
Dressing: 3 tbsp olive oil
2 tbsp lemon juice, 1 clove garlic, 1 tsp oregano, salt/pepper to taste.
Instructions
Flake drained tuna into a large bowl.
Add cucumber, tomatoes, olives, onion, and parsley.
Whisk dressing ingredients in a separate small bowl.
Pour dressing over salad and toss gently to coat.
Fold in feta cheese.
Serve chilled or at room temperature.
Notes
English cucumbers provide the best crunch.
Store in the fridge for up to 3 days.
Serve in pitta bread or lettuce wraps.
