Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Prepare the Marinade:
  • In a bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper.
  • Marinate the Chicken:
  • Place chicken in a resealable bag or shallow dish. Pour marinade over it. Seal or cover and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).
  • Preheat the Grill:
  • Heat your grill to medium-high.
  • Grill the Chicken:
  • Remove chicken from marinade and discard leftover marinade. Grill for 6–7 minutes per side, or until internal temperature reaches 165°F (75°C).
  • Rest and Serve:
  • Let the chicken rest for a few minutes before slicing. Serve with your favorite sides!

Notes

For even juicier chicken, pound the chicken breasts to an even thickness before marinating—this helps them cook evenly on the grill. If you don’t have a grill, you can also cook the chicken in a grill pan or bake it at 400°F (200°C) for 20–25 minutes. Add a sprinkle of fresh herbs or a squeeze of lemon before serving for a vibrant finish!
