- For the Dough
- 1 ½ cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 large egg
- 1 cup almond flour
- 1 tsp baking powder
- ½ tsp xanthan gum optional, for elasticity
- ¼ tsp salt
- For Topping
- 1 egg beaten (for egg wash)
- Coarse salt or everything bagel seasoning
- Optional Dips
- Warm mustard dip
- Keto cheese sauce cheddar + cream
- Cinnamon “sugar” glaze erythritol + butter
Melt mozzarella and cream cheese in a microwave-safe bowl, heating 30 seconds at a time until smooth.
In another bowl, whisk almond flour, baking powder, xanthan gum, and salt. Add to melted cheese and mix well.
Add the egg and knead until a smooth dough forms. If sticky, chill for 5 minutes.
Divide into 6 pieces, roll each into a 10-inch rope, and twist into pretzel shapes (or make pretzel bites).
Place on a parchment-lined baking sheet. Brush with egg wash and sprinkle coarse salt.
Bake at 400°F (200°C) for 12–15 minutes until golden brown.
Let cool slightly before serving warm with your favorite dip.
Shape the dough while it’s warm — Fathead dough stiffens as it cools.
Knead well for smoother texture and even baking.
For crispier pretzels, bake 2–3 minutes longer.
Add flavor by brushing with garlic butter or sprinkling Parmesan after baking.
