pure pumpkin purée
not pumpkin pie filling

rolled oats
1
large egg
2
tablespoons
coconut oil
melted
1
tablespoon
peanut butter
optional, xylitol-free

teaspoon
cinnamon
optional

–2 tablespoons water
as needed
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper
Pulse rolled oats in a food processor until coarse flour forms
In a bowl, mix pumpkin purée, egg, melted coconut oil, and peanut butter until smooth
Stir in ground oats until a thick dough forms
Add water 1 tablespoon at a time if dough is crumbly
Roll dough into 4–5 inch stick shapes and place on baking sheet
Bake for 25–30 minutes, flipping halfway through
For firmer sticks, bake an extra 5–10 minutes at 300°F
Cool completely before serving
