In a separate bowl, mix applesauce, eggs, honey/maple syrup, melted oil, and vanilla until smooth.
Bring It Together
Add dry ingredients to wet mixture and stir until just combined.
Fold in optional add-ins like nuts, raisins, or chocolate chips.
Fill Muffin Cups and Bake
Divide batter evenly into muffin cups, filling about ¾ full.
Bake for 18–22 minutes, or until a toothpick comes out clean.
Cool for 5 minutes in the pan, then transfer to a wire rack.
