Healthy Applesauce Muffins

Ingredients
  

  • Dry Ingredients
  • 1 ½ cups whole wheat flour or all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg optional
  • Wet Ingredients
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • ¼ cup honey or maple syrup
  • ¼ cup melted coconut oil or olive oil
  • 1 teaspoon vanilla extract
  • Optional Add-ins
  • ½ cup raisins or chopped nuts
  • ½ cup mini chocolate chips
  • ¼ cup shredded coconut

Instructions
 

  • Preheat Oven and Prep Pan
  • Preheat oven to 350°F (175°C).
  • Line a 12-cup muffin tin with paper liners or lightly grease.
  • Mix Dry Ingredients
  • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Combine Wet Ingredients
  • In a separate bowl, mix applesauce, eggs, honey/maple syrup, melted oil, and vanilla until smooth.
  • Bring It Together
  • Add dry ingredients to wet mixture and stir until just combined.
  • Fold in optional add-ins like nuts, raisins, or chocolate chips.
  • Fill Muffin Cups and Bake
  • Divide batter evenly into muffin cups, filling about ¾ full.
  • Bake for 18–22 minutes, or until a toothpick comes out clean.
  • Cool for 5 minutes in the pan, then transfer to a wire rack.

Notes

Do not overmix to avoid dense muffins.
Use ripe applesauce for natural sweetness.
Add a pinch of nutmeg to elevate flavor.
For extra moisture, add 2 tablespoons of yogurt or milk.
