Fluffy Almond Flour Waffles Recipe

Ingredients
  

  • 2 cups fine blanched almond flour
  • 2 large eggs separated
  • ½ cup milk dairy or unsweetened almond milk
  • 2 tablespoons melted butter or coconut oil
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon optional
  • ¼ teaspoon nutmeg optional
  • ¼ cup chocolate chips or blueberries optional

Instructions
 

  • Preheat waffle maker and lightly grease with butter or oil
  • In a bowl, whisk almond flour, baking powder, baking soda, salt, and optional spices
  • In another bowl, whisk egg yolks, milk, melted butter, maple syrup, and vanilla
  • Beat egg whites in a clean bowl until soft peaks form
  • Add wet ingredients to dry ingredients and mix gently until just combined
  • Carefully fold in whipped egg whites without overmixing
  • Let batter rest for 3–5 minutes
  • Scoop batter into waffle maker
  • Cook 3–5 minutes until golden brown and crisp
  • Remove carefully and repeat with remaining batter
