Dunkin’ Donuts–Style Bran Muffins

Ingredients
  

  • cups wheat bran
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup buttermilk
  • ½ cup brown sugar packed
  • ¼ cup honey or molasses
  • cup vegetable oil or melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup raisins optional
  • ¼ cup chopped walnuts or pecans optional

Instructions
 

  • Mix wheat bran and buttermilk in a large bowl and let soak for 10 minutes
  • Preheat oven to 375°F (190°C) and line or grease a muffin tin
  • Add brown sugar, honey or molasses, oil, egg, and vanilla to the soaked bran and stir until smooth
  • In a separate bowl, whisk flour, baking soda, baking powder, salt, and cinnamon
  • Fold dry ingredients into wet mixture just until combined
  • Fold in raisins or nuts if using
  • Divide batter evenly into muffin cups, filling about ¾ full
  • Bake for 18–22 minutes until tops spring back and a toothpick comes out clean
  • Cool 5 minutes in the pan, then transfer to a wire rack

Notes

Soaking the bran is essential for moist muffins
Do not overmix or muffins will turn dense
Oil gives a softer texture; butter adds more flavor
Molasses gives a deeper, bakery-style bran flavor
Muffins taste even better the next day
Freeze well for up to 3 months
