- 1 cup raw pecan halves
- 1 cup brown sugar packed
- ½ cup white sugar
- 1 cup water
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- Optional for stronger flavor
- ¼ teaspoon butter extract
- ¼ teaspoon pecan extract
Toast pecans in a dry pan over medium heat for 3–4 minutes until fragrant; roughly chop.
In a saucepan, combine water, brown sugar, and white sugar; heat until fully dissolved.
Add butter, salt, and toasted pecans; stir and bring to a gentle simmer.
Simmer on low for 10–12 minutes to infuse flavor (do not boil hard).
Remove from heat and let rest for 20 minutes.
Strain through a fine mesh strainer, pressing lightly to extract liquid.
Stir in vanilla and optional extracts once slightly cooled.
Cool completely before transferring to a jar or bottle.
