Crispy Garlic Lemon Cod

Servings 4 Fillet

Ingredients
  

  • 4 cod fillets 5–6 oz each
  • 2 tablespoons mayonnaise or melted butter
  • 3 garlic cloves minced
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley or 1 tablespoon fresh chopped parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Optional: 2 tablespoons grated Parmesan
  • Lemon wedges for serving

Instructions
 

  • Pat cod fillets dry and season both sides lightly with salt and pepper.
  • Mix mayonnaise or butter, garlic, lemon zest, lemon juice, paprika, parsley, and optional Parmesan until smooth.
  • Spread the mixture evenly over the tops of the cod fillets.
  • Place on a lined baking sheet and bake at 400°F (200°C) for 12–15 minutes, or until fish flakes easily.
  • Squeeze fresh lemon juice on top before serving; add herbs if desired.
