Preheat oven to 400°F (200°C) and line or lightly grease a baking sheet.
In a medium bowl, mix shredded chicken, cheese, onions, bell peppers, garlic powder, chili powder, cumin, salt, and black pepper.
Place about 1 tablespoon of the chicken mixture in the center of each wonton wrapper; fold or curl into a taco shape and place seam-side down on the baking sheet.
Lightly brush or spray wontons with olive oil.
Bake for 12–15 minutes, turning halfway through, until golden and crispy.
Let cool for a few minutes, then top with optional toppings and serve immediately.
