Ciabatta roll

oz
cooked chicken

tbsp
pesto mixed with 1 tbsp mayo
2
slices
mozzarella
Handful of arugula
2
slices
tomato
Balsamic glaze
Instructions
Toast sliced bread until golden.
Spread pesto-mayo on both inner sides of the bread.
Layer chicken and mozzarella; melt the cheese under a broiler or in a press.
Top with tomato, arugula, and a drizzle of balsamic glaze.
Close the sandwich, slice, and serve immediately.
Notes
Add red pepper flakes for a spicy kick.
If using cold chicken, warm it slightly before adding to ensure the cheese melts properly.
Freshly cracked black pepper on the tomatoes adds a nice finish.
Use a high-quality balsamic glaze for the best "café" experience.
