Cheesy Ranch Potatoes and Smoked Sausage

Ingredients
  

  • 1 lb smoked sausage sliced into ¼-inch rounds
  • 2 lbs baby potatoes quartered (or russet potatoes, diced)
  • 2 tbsp olive oil or melted butter
  • 1 packet ranch seasoning mix about 1 oz
  • 1 cup shredded cheddar cheese plus more for topping
  • ½ cup shredded mozzarella or Monterey Jack cheese
  • ½ cup sour cream or plain Greek yogurt
  • 2 tbsp chopped green onions or parsley for garnish
  • Salt and pepper to taste
  • Optional Add-Ins:
  • ½ cup cooked bacon bits
  • 1 diced bell pepper or onion
  • A dash of cayenne or smoked paprika

Instructions
 

  • Preheat oven to 400°F (200°C) and lightly grease a large baking dish.
  • In a large bowl, toss potatoes with olive oil, ranch seasoning, salt, and pepper until coated. Spread evenly on the dish and roast for 20–25 minutes, stirring halfway through, until golden and nearly tender.
  • Add the smoked sausage over the potatoes and bake another 15 minutes until the sausage browns.
  • Sprinkle cheddar and mozzarella over the top and bake 5–7 minutes more, until the cheese melts and bubbles.
  • Remove from oven, top with sour cream, and garnish with green onions or parsley. Serve warm.

Cut potatoes evenly for even roasting.
Pre-cooked sausage adds the best smoky flavor.
