Ingredients
  

  • 1 teaspoon salt
  • 1 teaspoon dried sage
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon dried marjoram
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon brown sugar optional
  • 1 pound ground chicken or ground turkey
  • 1 –2 tablespoons olive oil recommended for moisture with lean meat

Instructions
 

  • Add all spices to a small bowl and mix until evenly combined
  • Place ground chicken or turkey in a mixing bowl
  • Add the seasoning blend and olive oil
  • Mix gently until just combined
  • Let the seasoned meat rest for 10–15 minutes
  • Form into patties, crumbles, or small logs
  • Cook in a lightly oiled pan over medium heat
  • Flip patties once and cook until internal temperature reaches 165°F

Chicken and turkey are lean, so moderate heat prevents drying out
