Step 1: Drain the Zucchini
Grate zucchini using a box grater.
Place in a clean kitchen towel and squeeze out as much liquid as possible.
This step is key for crispy fritters.
Step 2: Make the Batter
Add drained zucchini to a bowl.
Mix in eggs until well combined.
Stir in flour and salt until a thick batter forms.
If batter feels too wet, add 1 tablespoon flour.
Step 3: Fry
Heat a thin layer of oil in a skillet over medium heat.
Scoop batter into the pan and flatten slightly.
Cook 3–4 minutes per side until golden brown.
Fry in batches to avoid overcrowding.
Step 4: Drain & Serve
Transfer to paper towels to drain excess oil.
Let rest 1 minute before serving for extra crispiness.
