4 Ingredient Crispy Zucchini Fritters

Ingredients
  

  • 2 medium zucchini grated
  • 2 large eggs
  • ½ cup all-purpose flour
  • Salt to taste
  • Oil for frying

Instructions
 

  • Step 1: Drain the Zucchini
  • Grate zucchini using a box grater.
  • Place in a clean kitchen towel and squeeze out as much liquid as possible.
  • This step is key for crispy fritters.
  • Step 2: Make the Batter
  • Add drained zucchini to a bowl.
  • Mix in eggs until well combined.
  • Stir in flour and salt until a thick batter forms.
  • If batter feels too wet, add 1 tablespoon flour.
  • Step 3: Fry
  • Heat a thin layer of oil in a skillet over medium heat.
  • Scoop batter into the pan and flatten slightly.
  • Cook 3–4 minutes per side until golden brown.
  • Fry in batches to avoid overcrowding.
  • Step 4: Drain & Serve
  • Transfer to paper towels to drain excess oil.
  • Let rest 1 minute before serving for extra crispiness.

Notes

Squeeze zucchini thoroughly
Use medium heat
Don’t flip too early
Keep fritters thin
Salt after draining zucchini
